Tarte Tatin with Peaches

A magic tarte tatin creation with a subtle caramel that is not oversweet with black pepper and lime. Scrumptious
Ingredients
- 75g powder sugar
- 300 grams of butter puff pastry
- 40 grams of unsalted butter
- Pinch of salt
- 3 cl lime juice
- 8 Ripe peaches
- Crushed black pepper to taste
- 30 Cl fresh double cream whipped and add black pepper to taste
1make caramel. Melt the sugar at 150 degrees in a pan. Take of the Stove and incorporate the butter carefully as it is hot. Add salt and lime juice to taste and incorporate until you have a nice shiney caramel. Put to the side.
3rollout the butter puff pastry. 2 cm larger than your shape. Put over the peaches and tuckin on the sides with a chopstick. And make some holes for in the pastry. Preheat your oven to 190 degrees celcius and bake for 24 minutes.
4let it cool down and then flip with a plate on top. Add a little crushed black pepper.
Serve this with a 2 spoons of black pepper whipped cream. Enjoy!
