My Carrot Cake for You


Delicious carrot cake with raisins and barberries yummmie


  • 300 grams of sieved flour
  • 4 eggs
  • 4 drops almond and 3 drops of orange flavoring
  • 2 tspn or 8 grams of baking soda
  • 0.5 tspn or 4 gram salt
  • 260 gram Canola oil or coconut fat
  • 1 grated apple
  • 80 grams total of soaked raisins and barberries (soak 10 minutes before)
  • 2 - 3 tspn or 8 grams cinnammon
  • 80 grams of toasted pecan nuts cooled or walnuts
  • Inside of 2 vanilla beans
  • 320 grams of fresh grated carrots
  • For the icing take 200 grams of room temperature cream cheese, 120 grams of powder sugar and 75 Ml cold double cream. Cream cheese at room temperature whip for 1 minute. Add the powder sugar bit by bit till fluffy this takes around 1 - 2 minutes at medium speed and then whip in the cream for another minute or 2. Add vanilla flavors if you would like.Put in the fridge for later

    1Combine the spices flour, baking powder and sieve.

    2Mix the egg yolks, sugar, oil.


    4greas the spring shapes put baking paper at the bottom. Preheat the oven to 180 degrees

    5In the pre-heated oven at 180 degrees bake the bake for around 35 - 40 minutes until a cake tester comes out almost clean Remember the cake will cook cooking after you take it out of the oven. Careful not to overcook it. Leave to cook on a cooling rack for atleast 1 hour.
