Thank you Chapter one in Dublin for this exceptional Irish Coffee creation.
Recreate this true delicious Irish coffee for those cold winter nights and hot summer evenings :)
Ingredients
- Good quality coffee. For the amount of cups that you need. Or a long espress.
 - 50 - 80 ml of Irish whiskey per person or more :). For example Jameson (Founded by a Scot:))
 - 100 ml double cream slightly whipped to increase thickness
 - Mace and nutmeg
 - 2 tspn of brown cane sugar
 
1put a pan on the fire. Add the add sugar and caramalize it gently. Wairt till golden brown (120 -125) degrees celcius). Then add the whiskey. This can flame oup and is ok just be careful. Wait for a little till most of the flames are gone
2Wait a little and add the coffee. Gently mix wait 10 seconds on very low heat DO NOT BOIL THE COFFEE!
3Pour the coffee in a a long glass mug. Fill 60-70% now add the double cream gently (ensure this is not too cold). Use a spoon to pour the double cream.
2Grind some nutmeg and mace over the coffee.
