Breakfast gold - Almond Croissants French Style
Every morning a big hunt takes place in France. From village to village people get out of their houses and start the hunf for..... Almond croissants. The bakers of France use the croissants of the previous day to create this delicious piece of breakfast perfection. Now you can too.
For the Frangipane
- 240 grams finely ground whole blanched almonds or almond flour
- 200 grams sugar
- 100 gram flour
- 0.5 tspn salt
- 100 gram unsalted butter
- 2 eggs
- Optional Zest of 1 Orange/Lemon and or a few drops of cherry/almond flavor
1Mix the butter and sugar until light and creamy
2Add the ground almonds
3Add optional almond flavor
4Now add the eggs,mix, and little by little mix in the flour
Rhum Sirop
- 25 Cl water
- 2 Tbspn sugar
- 4 Tbspn rhum,cherry liquer or ammaretto
- 100 grams of sliced almonds
1Prepare the syrup: combine 25 Cl water, 2 Tbpsn of sugar sugar and 6 Tbspn of Rhum. Stir togehter, bring to a quick boil and let it cool down.
Almond Heaven Creation
1Gently slice the old croissants in 2 halves
2With a brush paint the inside of both halves with the sirop mixture
3Add 2 - 3 spoons of frangipane in the inside
4Brush the top of the croissants with sirop and a spoon of frangipane, add some almond slices on top
5Heat the oven to 180 degrees and bake for 12 - 15 minutes
